Applebee's Smothered Steak Skillet

A copycat of Applebee's Smothered Steak Skillet: grilled sirloin topped with melted mozzarella, served over roasted-garlic mashed potatoes and smothered in sauteed onions and mushrooms.

Ingredients

1 headgarlic (for potatoes)
1 tablespoonolive oil (for potatoes)
900 g (2 pounds)potatoes (Yukon Gold or new potatoes)
120 ml (1/2 cup)milk
60 ml (1/4 cup)cream
3 tablespoonsbutter
to tastesalt and freshly ground pepper
1large yellow onion
225 g (8 ounces)white button or cremini mushrooms
2 tablespoonsbutter (for onions and mushrooms)
1.15 kg (2 1/2 pounds)sirloin steak, 2.5 cm (1 inch) thick
8 slicesmozzarella cheese slices

Instructions

  1. Preheat oven to 200°C (400°F). Cut the head of garlic crosswise and lay on a piece of foil. Drizzle the cut edges with the olive oil and wrap tightly in the foil. Bake for 30 minutes. Reserve the oil in the packet and squeeze the head to release the softened cloves. Mash with salt and pepper and set aside (can be done ahead).
  2. Cut the potatoes into 2.5 cm (1 inch) pieces and place in a large pot. Cover with water, bring to a boil, then lower the heat to medium and cook for 20-25 minutes until soft when tested with a fork. Drain well and place in the bowl of an electric mixer fitted with the paddle attachment. On low speed, mash the potatoes, slowly adding the milk, cream, butter and then the olive oil/garlic mixture, until fluffy and smooth. Cover and keep warm until ready to serve.
  3. While the potatoes are boiling, heat olive oil in a medium non-stick skillet over medium-low heat and cook the onion until slightly softened, stirring frequently, about 15 minutes. Add the mushrooms, raise the heat to medium and cook, stirring frequently, another 10 minutes. Keep warm until ready to serve.
  4. Cut the steak into 4 serving-size pieces and rub all over with olive oil. Heat an outdoor grill or stovetop grill pan and grill the steaks 4 minutes per side for medium-rare, or longer as desired. After the first 4 minutes, turn and top each steak with mozzarella slices; the cheese will melt as the steak finishes cooking.
  5. Serve the steaks with the mashed potatoes and top with some of the onion-mushroom mixture.
