Ingredients

| 3 tablespoons (45 ml) | olive oil |
| 2 teaspoons | garlic powder |
| 2 teaspoons | onion powder |
| 1 teaspoon | smoked paprika |
| 1 teaspoon | black pepper (for steaks) |
| 1 teaspoon | salt (for steaks) |
| 2 tablespoons (30 g) | butter (for searing) |
| 4 tablespoons (60 g) | butter, softened (for herb butter) |
| 3 cloves | garlic, minced (for herb butter) |
| 1 tablespoon | fresh parsley, chopped (for herb butter) |
| 1 teaspoon | fresh thyme leaves |
| 1/2 teaspoon | black pepper (for herb butter) |

| 16 oz (450 g) | button or cremini mushrooms, sliced |

Instructions
- Make the garlic herb butter: mix softened butter with minced garlic, parsley, thyme, black pepper and salt until evenly combined. Roll into a log in plastic wrap and refrigerate until firm.
- Season the steaks: remove from the fridge 20 minutes before cooking. Pat dry and brush both sides lightly with olive oil. Mix garlic powder, onion powder, smoked paprika, black pepper and salt; season the steaks generously, pressing so the spices adhere.
- Cook the steaks: heat a large cast-iron skillet over high heat until nearly smoking. Add the steaks without crowding and sear undisturbed 4-5 minutes until a deep crust forms. Flip, add butter, and cook 4-5 minutes more for medium-rare (57°C / 135°F) or 6-7 minutes for medium (63°C / 145°F), basting with the melted butter in the last minute. Rest tented with foil 5-7 minutes.
- Sauté the mushrooms: in the same skillet over medium-high heat, melt butter and scrape up browned bits. Add mushrooms in a single layer and cook undisturbed 3-4 minutes until browned, then toss and cook 3-4 minutes more until tender. Add garlic and cook 1 minute, stir in Worcestershire, season with salt and pepper and finish with parsley.
- Plate: place mashed or baked potato on each plate, set the rested steak alongside, top with a slice of garlic herb butter, and spoon the mushrooms over and around. Add steamed vegetables and optional onion strings. Serve immediately.
