Big Boy Strawberry Pie

A copycat of Big Boy's strawberry pie — a sweet shortbread-style crust piled with fresh strawberries under a glossy red glaze and topped with whipped cream.

Ingredients

1 cup (125 g)all-purpose flour
4 ounces (115 g)butter, at room temperature
3 tablespoons (24 g)confectioners' sugar
1 teaspoon (5 ml)vanilla extract
1 cup (240 ml)water
¾ cup (150 g)granulated sugar
¼ teaspoonsalt
2 tablespoons (16 g)cornstarch
¼ teaspoonred food coloring
1 quart (about 600 g)strawberries, rinsed, stemmed and dried
1 pint (475 ml)whipped cream, for garnish

Instructions

  1. Preheat the oven to 175°C (350°F). Make the crust by combining the flour, butter, confectioners' sugar and vanilla. Mix well and press into the bottom and up the sides of a 23 cm (9-inch) pie pan. Prick all over.
  2. Bake for about 10 to 15 minutes, until lightly browned. Remove from the oven and let cool completely.
  3. While the crust is baking, mix the water, granulated sugar, salt, cornstarch and red food coloring in a small saucepan. Cook over medium heat, stirring constantly, for about 5 minutes, until thickened. Set aside to cool.
  4. When the crust is cool, pile the berries in the crust and pour the thickened glaze over the top. Refrigerate until the glaze is set.
  5. Serve with a dollop of whipped cream or whipped dessert topping.
