Bojangles Bo-Berry Biscuit (Copycat)
A copycat of Bojangles' famous Bo-Berry Biscuits — tender, lemon-scented drop biscuits studded with blueberries and finished with a sweet lemon glaze. Makes about a dozen.

Ingredients
| 250 g (2 cups) | all-purpose flour |
| 0.5 tsp | baking soda |
| 0.25 tsp | salt |
| 100 g (1/2 cup) | sugar |
| 2 tsp | baking powder |
| 240 g (1 cup) | lemon yogurt |
| 1 | large egg, unchilled |
| 60 g (1/4 cup) | melted butter |
| 1 tsp | grated lemon zest |
| 150 g (1 cup) | blueberries, fresh or frozen |
| 0.5 tsp | grated lemon zest (for glaze) |
| 60 g (1/2 cup) | confectioner's sugar (for glaze) |
| 15 ml (1 tbsp) | lemon juice (for glaze) |
Instructions
- Set the oven to 200°C (400°F). Lightly spritz a baking tray with cooking oil spray.
- Sift together the baking soda, flour, sugar, baking powder and salt.
- In a separate bowl, beat the egg, yogurt, melted butter and lemon zest until blended.
- Fold in the flour mixture, then gently mix in the blueberries.
- Scoop the dough and drop it one inch (2.5 cm) apart onto the prepared pan.
- Bake until lightly browned, 15-18 minutes.
- For the glaze, combine the lemon zest, confectioner's sugar and lemon juice, stirring until smooth. Drizzle over the warm biscuits.
