Bojangles Stuffed Potato Pancakes
A copycat of Bojangles-style stuffed potato pancakes: seasoned mashed-potato patties wrapped around a cream cheese center, breaded and deep-fried until golden. Makes 8 cakes.

Ingredients
| 2 cups (480 g) | mashed potatoes (with additional milk & butter) |
| 0.66 cup (75 g) | shredded cheddar cheese |
| 0.33 cup (40 g) | all-purpose flour |
| 1 | large egg |
| 1 tbsp | minced chives |
| 0.5 tsp | black pepper |
| 0.5 tsp | salt |
| 0.66 cup (70 g) | seasoned breadcrumbs |
| 0.5 tsp | cayenne pepper |
| 1 tsp | onion powder |
| 1 tsp | garlic powder |
| 0.33 cup (75 g) | cream cheese, unchilled |
| as needed | oil, for deep-frying |
Instructions
- In a large mixing bowl combine the whisked egg, flour, cheddar cheese, mashed potatoes, chives, black pepper and salt.
- In a shallow dish combine the seasoned breadcrumbs, onion powder, garlic powder and cayenne.
- Shape two teaspoons of the cream cheese into a ball. Wrap about 1/4 cup of the potato mixture around the cheese ball to cover it completely.
- Drop into the crumb mixture, gently coat, and shape into a 1/2-inch (1.3 cm) thick patty. Repeat with the rest of the cream cheese and potato mixture until you have eight cakes.
- Using a deep-fat fryer or electric skillet, warm the oil to 375°F (190°C).
- Fry the stuffed pancakes a few at a time until browned, about 1 to 2 minutes per side. Drain briefly on paper towels before serving.
