Ingredients

1 cup (220 g)brown sugar, tightly packed
1/2 cup (45 g)quick-cooking oatmeal
2 cups (250 g)all-purpose flour
3/4 cup (170 g)melted butter
2/3 cup (135 g)sugar (for the filling)
3 tablespoonscornstarch
1 1/4 cups (300 ml)cold water
4 cupstart apples, peeled and chopped
1 teaspoonvanilla extract

Instructions

  1. Warm the oven to 350°F (177°C). Combine the flour, oats, brown sugar and melted butter, reserving 1.5 cups for the topping.
  2. Make the crust by pressing the rest of the mixture onto the sides and bottom of an ungreased nine-inch pie plate.
  3. Mix the cornstarch, sugar and water until creamy. Bring to a boil and simmer until thickened, about 2 minutes.
  4. Peel, chop and stir in the apples along with the vanilla. Pour the filling into the crust and crumble the reserved topping over the top.
  5. Bake until the filling is bubbly, 40-45 minutes. Let cool on a wire rack before serving.
