Ingredients

1 lb (450 g)bulk pork sausage
1/2 lb (225 g)bacon strips
18large eggs
2 cupsfrozen shredded hash brown potatoes
1 largeonion, chopped
1 can (10.75 oz / 305 g)condensed cheddar cheese soup (undiluted)
1 can (4 oz / 115 g)chopped green chiles
1/2 teaspoonpepper
1 teaspoongarlic powder
2 cupsshredded cheddar cheese
10warmed 10-inch flour tortillas
to tastesalsa (optional topping)
to tastejalapeno peppers (optional topping)
to tastehot pepper sauce (optional topping)

Instructions

  1. Thaw and shred the hash browns. Cook and drain the sausage and bacon on a layer of paper towels.
  2. Mix the sausage, bacon, hash browns, eggs, onion, condensed cheddar cheese soup, green chiles, pepper and garlic powder.
  3. Dump about half of the egg mixture into a four- or five-quart slow cooker coated with cooking oil spray.
  4. Cook, covered, on the low setting for four to five hours, or until the center is set.
  5. Spoon about 3/4 cup of the egg mixture across the center of each warmed flour tortilla. Fold the bottom and sides over the filling and roll it up.
  6. Add toppings of your choice, such as salsa, jalapeno peppers or hot pepper sauce.
