Captain D's Batter Dipped Fish

A copycat of Captain D's crispy batter-dipped white fish — cod, hake or any firm white fillet coated in a light, foamy cornstarch batter and deep-fried until golden.

Ingredients

1 1/2 cups (190 g)all-purpose flour
1/2 cup (65 g)cornstarch
1 tablespoonbaking powder
2 teaspoonskosher salt
1/2 teaspooncayenne pepper
1 1/2 cups (360 ml)water
2 pounds (900 g)cod, hake or other white fish
as neededvegetable oil for frying

Instructions

  1. Preheat the oil to 175°C (350°F) in either a deep fryer or a medium-sized saucepan.
  2. In a medium bowl, mix together the flour, cornstarch, baking powder, salt and cayenne pepper. Whisk in the water. The batter will get a little foamy — continue to mix.
  3. Pat the fish dry with a paper towel to remove excess moisture.
  4. Coat the fish in the batter, working to fully coat each fillet.
  5. Deep-fry the fish for 3 to 4 minutes, until it is golden brown. If you fry multiple pieces at once you may want to separate them while cooking.
  6. Drain the fish on a wire rack.
