Ingredients

| 2 | chicken breasts |
| as desired | black pepper & kosher salt |
| 4 oz (115 g) | goat cheese |
| 6 | sun-dried tomatoes |
| 2-4 tbsp | fresh basil |
| 4 tsp | garlic |
| 4 tsp | onions |
| 8 tbsp (115 g) | butter, divided |
| 1/2 cup (120 ml) | white wine |
| 4 tbsp (60 ml) | fresh lemon juice |
Instructions
- Remove all skin and bones from the chicken breasts.
- Chop the basil and sun-dried tomatoes and set aside.
- Brush both sides of the chicken with olive oil and dust with black pepper and salt.
- Grill the chicken until done (internal temperature of 74°C / 165°F), preparing the lemon butter sauce while it grills.
- Dice and sauté the garlic and onions in 2 tablespoons of the butter until softened. Stir in the white wine and lemon juice, lower the heat to medium-low and simmer about 10 minutes to reduce.
- Add the remaining butter (6 tbsp), a little at a time, until melted. Fold in the chopped sun-dried tomatoes and basil and simmer until warm.
- Top each chicken breast with 2 ounces (55 g) of goat cheese and let it soften.
- Serve the chicken with a spoonful of the lemon butter sauce over the top.
