Instructions

- Make the crust: Preheat the oven to 325°F (165°C). Crush the Oreo cookies (for the crust) and stir in the melted butter. Press into the bottom of a 9-inch (23 cm) springform pan. Bake 10 minutes; cool.
- Make the filling: Beat the softened cream cheese and sugar until smooth. Beat in the sour cream and vanilla, then add the eggs one at a time, mixing on low just until combined.
- Fold in the chopped Oreos. Pour the filling over the cooled crust and smooth the top.
- Bake at 325°F (165°C) for 55–65 minutes, until the center is just set with a slight jiggle. Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour.
- Refrigerate at least 6 hours or overnight. Top with additional halved or crushed Oreos before serving.
