A copycat of The Cheesecake Factory's spiced pumpkin cheesecake, baked in a water bath on a graham cracker crust and served with sweetened whipped cream and toasted pecans.

Ingredients

2 1/2 cups (250 g)graham cracker crumbs
3/4 cup (170 g)unsalted butter, melted
2 3/4 cups (550 g)granulated sugar, divided
1 teaspoonsalt, plus a pinch
4 blocks, 8 oz each (900 g)cream cheese, at room temperature
1/4 cup (60 ml)sour cream
1 can, 15 oz (425 g)pure pumpkin puree
6large eggs, room temperature
1 tablespoon (15 ml)vanilla extract
2 1/2 teaspoonsground cinnamon
1 teaspoonground ginger
1/4 teaspoonground cloves
2 cups (480 ml)sweetened whipped cream
1/3 cup (40 g)toasted pecans, roughly chopped

Instructions

  1. Preheat the oven to 165°C (325°F) and grease a 30 cm (12-inch) springform pan.
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, 1/4 cup of the sugar, and a pinch of salt. Mix well and press into the prepared pan.
  3. Bake for about 25 minutes. Meanwhile, begin the filling by beating together the cream cheese, sour cream, and pumpkin.
  4. Add the rest of the sugar, then slowly incorporate the beaten eggs and vanilla. Add the remaining salt, cinnamon, ginger, and cloves.
  5. Fill a large baking pan (big enough to hold the springform) with about 1 cm (half an inch) of water. Place it in the oven and let the water heat up.
  6. Wrap foil around the edges of the springform pan, add the filling, and set the pan into the water bath in the oven.
  7. Bake for 1 hour 45 minutes, or until the center is set. If the top browns too much, fold the foil over the edges.
  8. Remove the pan and cool on a rack for at least 1 hour before removing the sides. After cooling, remove the sides and refrigerate at least 8 hours or overnight.
  9. Serve with whipped cream and roughly chopped toasted pecans.
