Instructions
- Prepare the biscuits: preheat the oven to 218°C (425°F).
- Measure the salt, flour and baking powder into a food processor and pulse to mix.
- Cube the chilled butter and add it, pulsing to create coarse crumbs, then tip into a mixing bowl and stir in the buttermilk and honey.
- Lightly flour a cutting board, scoop out the dough and roll it to about one inch thick.
- Gently roll the dough into a rectangle about 1.3 cm (1/2 inch) thick.
- Use a 7.5 cm (3 inch) biscuit cutter to cut eight biscuits; gather the scraps for one more.
- Line a baking sheet with parchment paper, lightly brush each biscuit with buttermilk and bake until golden.
- Prepare the chicken: pound the chicken breasts to about 1.3 cm (1/2 inch) thick and cut in half.
- Soak the chicken in the pickle juice and milk, then dredge in the seasoned flour and breadcrumb mixture (breadcrumbs pulsed fine in the food processor).
- Dip the chicken breasts in the mixture and let rest about five minutes before cooking.
- Heat peanut oil about 1.3 cm (1/2 inch) deep in a cast-iron skillet over medium heat and fry the chicken until crisp and cooked through. Slice the fresh biscuits, fill and serve promptly.
