Chick-fil-A Chicken Nuggets
A copycat of Chick-fil-A's bite-sized breaded chicken nuggets — chicken breast marinated in seasoned bouillon overnight, then coated in a saltine-cracker breading and deep-fried until golden. Cook's tip: drain on a wire rack rather than paper towels so the nuggets stay crispy (paper towels make fried food steam).

Ingredients
| 1 1/2 pounds (680 g) | boneless skinless chicken breast, cubed |
| 2 cups (480 ml) | water (for marinade) |
| 2 | chicken bouillon cubes |
| 1 cup (125 g) | all-purpose flour |
| 1 1/2 cups | saltine cracker crumbs, crushed very fine |
| 2 teaspoons | powdered sugar |
| 1/4 teaspoon | paprika |
| 2 1/2 teaspoons | McCormick Seasonal or seasoned salt |
| as needed | peanut oil, for frying |
Instructions
- Marinade: Place cool water in a bowl, add 1/4 teaspoon McCormick Seasonal (or seasoned salt) and dissolve the bouillon cubes in the mixture. Place the cubed chicken in the water, mix, cover and refrigerate for 12 hours or overnight.
- Heat oil to 350°F (175°C) in a deep fryer, or in a large pot with enough oil that it is 4 inches (10 cm) deep.
- Pour off and discard the excess marinade; it cannot be reused.
- Prepare the coating by mixing together the flour, cracker crumbs, powdered sugar and paprika. Coat the chicken and set the nuggets on a wire rack. Let them rest a couple of minutes before frying — the coating stays on better once it dries a bit.
- Fry the nuggets a few at a time until golden brown. Remove from the oil and drain on a clean wire rack.
