
Chili's Chicken Crispers (Copycat)
A copycat of Chili's Chicken Crispers: chicken tenders in a light, airy club-soda batter, deep-fried golden and served with a homemade honey mustard dipping sauce.

Ingredients
| 1 pound (450 g) | chicken tenders |
| 1 1/2 cups (190 g) | flour |
| 2 teaspoons | baking powder |
| 1 1/2 teaspoons | salt |
| 1/2 teaspoon | black pepper |
| 1 | egg |
| 1 cup plus 2 tablespoons (270 ml) | club soda |
| 1/2 cup (65 g) | flour, for dredging |
| 1 cup (240 g) | mayonnaise |
| 1/4 cup (60 g) | dijon mustard |
| 1/4 teaspoon | cayenne pepper |
| 1/4 cup (85 g) | honey |
| for frying | vegetable oil, for frying |
Instructions
- Make the batter: whisk together the club soda and egg until uniform. Add the 1 1/2 cups flour, baking powder, salt and pepper and stir together. Let the batter rest a few minutes.
- Remove the chicken from its package and pat dry with a paper towel. Dredge the chicken in the 1/2 cup flour. Preheat the oil to 350°F (175°C).
- Dip the chicken into the batter and fry a few pieces at a time until golden and cooked through. (Any leftover batter can be used for onion rings, or discard the excess.)
- Make the honey mustard: combine the mayonnaise, dijon mustard, cayenne and honey and stir well. It keeps about a week in the refrigerator.
- Serve the crispers hot with the honey mustard.
