
Chocolate Sugar Cookies
Cut-out chocolate sugar cookies that hold their shape and are perfect for decorating with royal or glaze icing. Yields 28 cookies (3-inch, or 7.5 cm). Make-ahead tip: the rolled dough chills up to 2 days before cutting.

Ingredients
| 1 1/2 cups (180 g) | all-purpose flour (plus more for rolling) |
| 3/4 cup (65 g) | unsweetened natural or Dutch-process cocoa powder (plus more for dusting) |
| 1 teaspoon | baking powder |
| 1/4 teaspoon | salt |
| 3/4 cup (1 1/2 sticks, or 180 g) | unsalted butter, softened |
| 1 cup (200 g) | granulated sugar |
| 1 | large egg, room temperature |
| 1 teaspoon | pure vanilla extract |
| to taste | royal icing or glaze icing (for decorating) |
Instructions
- Whisk the flour, cocoa powder, baking powder, and salt together in a medium bowl. Set aside.
- In a large bowl, beat the butter on medium-high until smooth, about 1 minute. Add the granulated sugar and beat until creamed, about 2 minutes. Add the egg and vanilla and beat on high until combined, about 1 minute, scraping the bowl as needed.
- Add the dry ingredients to the wet and mix on low until combined. The dough will be slightly sticky.
- Divide the dough into 2 equal portions. Roll each out onto parchment paper or a lightly floured silicone mat to about 6 mm (1/4 inch) thickness.
- Stack the 2 slabs, with parchment between them, on a baking sheet and refrigerate at least 1 hour (up to 2 days). If chilling more than 2 hours, cover the top layer with parchment.
- Preheat oven to 180°C (350°F). Line baking sheets with parchment paper or silicone mats.
- Remove one slab and cut into shapes with a cookie cutter. Place shapes 7.5 cm (3 inches) apart. Reroll scraps and continue until used. Repeat with the second slab.
- Bake 10 to 11 minutes, until lightly browned around the edges, rotating the sheets halfway. Cool on the sheets 5 minutes, then transfer to a wire rack to cool completely before decorating.
- Decorate with desired icing and let set 2 to 3 hours.
- Decorated cookies stay fresh, covered, at room temperature or in the fridge up to 1 week.
