Cracker Barrel Coca-Cola Cake
A copycat of Cracker Barrel's Coca-Cola cake: a moist chocolate sheet cake made with Coca-Cola and mini marshmallows, topped with a warm chocolate-cream frosting. Baked in a 33 x 23 cm (13 x 9 inch) pan; serve with vanilla bean ice cream.

| 1 cup (240 ml) | Coca-Cola |
| 28 g (1 ounce) | baking chocolate (1 square) |
| 3/4 cup (40 g) | miniature marshmallows |
| 1/2 cup (95 g) | shortening |
| 1/2 cup (120 ml) | vegetable oil |
| 2 cups (400 g) | sugar |
| 2 | eggs |
| 2 teaspoons | vanilla |
| 3/4 cup (180 ml) | buttermilk |
| 2 1/3 cups (290 g) | all-purpose flour |
| 1 teaspoon | baking soda |
| 1 1/2 teaspoons | baking powder |
| 1/2 teaspoon | salt |
| 3/4 cup (65 g) | cocoa |
| 115 g (1/4 lb) | butter (frosting) |
| 3 tablespoons | cocoa (frosting) |
| 450 g (1 lb) | confectioners' sugar |
| 6 tablespoons (90 ml) | heavy cream |
| 1 teaspoon | vanilla (frosting) |
Instructions
- Preheat the oven to 175°C (350°F). In a saucepan, place the butter, Coca-Cola and baking chocolate square and bring to a boil. Remove from the heat, add the marshmallows and stir until blended and the marshmallows disappear. Set aside to cool to tepid or room temperature.
- In a mixing bowl, blend the shortening, oil, vanilla and sugar until fluffy. Add the eggs and buttermilk and beat until smooth. In another bowl, mix the flour with the baking soda, cocoa, baking powder and salt. Add half of the flour mixture to the shortening-egg mixture and beat, scraping the bowl so everything is blended. Add the cooled Coca-Cola mixture and beat. Add the remaining flour and beat until completely smooth, about 3-4 minutes; the batter will be thick.
- Pour the batter into a greased and floured 33 x 23 x 5 cm (13 x 9 x 2 inch) baking pan. Bake on the top shelf of the preheated 175°C (350°F) oven for 35-40 minutes, until a toothpick inserted in the middle comes out clean. Cool.
- Frosting: in a bowl, cream together the butter, cocoa and confectioners' sugar. Slowly add the 6 tablespoons of cream (or milk), then the vanilla. Frost the warm cake. Serve with natural vanilla bean ice cream and enjoy.
