Ingredients

2beef cube steaks (about 170 g / 6 oz each)
1 cup (125 g)all-purpose flour
1 teaspoongarlic powder
1 teaspoononion powder
1 teaspoonpaprika
1 teaspoonblack pepper
1 teaspoonsalt
2eggs
1/4 cup (60 ml)buttermilk
as neededvegetable oil, for frying
3 tablespoons (45 g)pan drippings or butter (for gravy)
3 tablespoons (25 g)all-purpose flour (for gravy)
2 cups (480 ml)whole milk
1/2 teaspoonblack pepper (for gravy)
to tastesalt, to taste (for gravy)
1/4 teaspoongarlic powder (for gravy)
4large eggs (for serving)
2 tablespoons (30 g)butter
to tastesalt and pepper
4biscuits (homemade or store-bought)
as neededhash browns or home fries
as neededbutter and jam, for biscuits

Instructions

  1. Prepare the breading station: In a shallow dish, mix flour, garlic powder, onion powder, paprika, black pepper, and salt. In another dish, whisk together eggs and buttermilk.
  2. Bread the steaks: Pat cube steaks dry. Dredge each steak in seasoned flour, dip in egg mixture, then coat again in flour, pressing firmly to adhere. Let rest for 5 minutes.
  3. Fry the steaks: Heat 6 mm (1/4 inch) of oil in a large cast-iron skillet over medium-high heat (175°C / 350°F). Fry steaks for 3-4 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate and keep warm in a 95°C (200°F) oven.
  4. Make the country gravy: Pour off all but 3 tablespoons of oil from the skillet. Add flour and whisk over medium heat for 1-2 minutes until golden. Gradually add milk while whisking constantly. Cook for 5-7 minutes, stirring frequently, until thickened. Season with pepper, salt, and garlic powder.
  5. Warm the biscuits: Heat biscuits in a 175°C (350°F) oven for 5-7 minutes until warm.
  6. Prepare hash browns: While gravy simmers, cook hash browns according to your preference (fried in butter until crispy and golden).
  7. Cook the eggs: In a separate pan, melt butter over medium heat and cook eggs to your liking (usually fried or over-easy for this breakfast). Season with salt and pepper.
  8. Assemble the plate: Place a country fried steak on each plate, smother generously with country gravy. Add 2 eggs, hash browns, and warm biscuits with butter on the side.
