DIY Sweetened Condensed Milk

Make sweetened condensed milk at home from just milk, sugar, butter and vanilla, simmered low and slow until reduced to a syrupy thickness. The finished amount is comparable to a 14-ounce can; weigh it before using in a recipe.

Ingredients

2 cups (480 ml)milk (whole yields the richest flavor)
2/3 cup (80 g)homemade confectioners' sugar (or 1/2 cup / 100 g granulated sugar)
5 tablespoons (71 g)unsalted butter, cut into pieces
2 teaspoons (10 ml)vanilla extract

Instructions

  1. Place the sugar and milk in a heavy-bottomed, medium saucepan. Whisk to combine. Apply medium heat and stir frequently until the sugar has completely dissolved and the mixture comes to a low boil.
  2. Reduce the heat to the lowest possible setting. Add the butter; it should melt fairly rapidly.
  3. Let the mixture hover over this very low heat until it has reduced to a sweetened condensed milk-type syrupy thickness, checking every 10 minutes or so. This can take up to 4 hours.
  4. Stir in the vanilla extract. The finished liquid is comparable to a 14-ounce (400 g) can; weigh before using in a recipe.
