Ingredients

1 cupall-purpose flour
1/4 cuprice flour
1 cupgranulated sugar
2 tspcornstarch
1/2 tspsalt
1/4 cup + 2 tbspcanola oil
1 tbspvanilla extract
3 tbspwater (or green tea)
4egg whites, lightly beaten

Instructions

  1. Whisk together the all-purpose flour, rice flour, sugar, cornstarch and salt.
  2. Stir in the canola oil, vanilla extract and water (or green tea) and mix into a smooth batter.
  3. Lightly beat 4 egg whites. Add half of the whites to the batter and mix, then add the remaining whites and mix again until smooth.
  4. On a paper-lined baking tray, spoon the batter and spread it with the back of a spoon into large, thin rounds.
  5. Bake until evenly golden all over.
  6. Working quickly while still hot, place a paper fortune in the center, fold each round in half, then bend it over the rim of a cup or a fold to form the classic fortune-cookie shape. Let cool to set crisp.
