Ingredients
| 1 cup | all-purpose flour |
| 1/4 cup | rice flour |
| 1 cup | granulated sugar |
| 2 tsp | cornstarch |
| 1/2 tsp | salt |
| 1/4 cup + 2 tbsp | canola oil |
| 1 tbsp | vanilla extract |
| 3 tbsp | water (or green tea) |
| 4 | egg whites, lightly beaten |
Instructions
- Whisk together the all-purpose flour, rice flour, sugar, cornstarch and salt.
- Stir in the canola oil, vanilla extract and water (or green tea) and mix into a smooth batter.
- Lightly beat 4 egg whites. Add half of the whites to the batter and mix, then add the remaining whites and mix again until smooth.
- On a paper-lined baking tray, spoon the batter and spread it with the back of a spoon into large, thin rounds.
- Bake until evenly golden all over.
- Working quickly while still hot, place a paper fortune in the center, fold each round in half, then bend it over the rim of a cup or a fold to form the classic fortune-cookie shape. Let cool to set crisp.
