German Quarkkeulchen (Quark & Potato Fritters)
German sweet fritters made from quark (here ricotta) and mashed potatoes, pan-fried until golden and served with apple sauce and powdered sugar. Taste the batter for sweetness and add more sugar if needed.

Ingredients
| 500 g | ricotta (quark) |
| 3 | boiled medium potatoes |
| 200 g | all-purpose flour |
| 6 tablespoons | sugar (add more if not sweet enough) |
| 1 | egg |
| 1 pinch | salt |
| 2 tablespoons | semolina |
| 2 tablespoons (30 ml) | lemon juice |
| 1 tablespoon | baking powder |
| to taste | raisins |
| for frying | sunflower oil, for frying |
| to serve | apple sauce, to serve |
| to dust | powdered sugar, to dust |
Instructions
- Mash the boiled potatoes.
- Add the ricotta (quark), sugar and lemon juice and mix well. Taste for sweetness and add more sugar if it is not sweet enough.
- When the sweetness is right, add the egg, flour, salt, semolina, baking powder and raisins and mix into a batter.
- With floured hands, shape into small fritters and fry in sunflower oil until golden on both sides.
- Serve with apple sauce and a dusting of powdered sugar.
