German Quarkkeulchen (Quark & Potato Fritters)

German sweet fritters made from quark (here ricotta) and mashed potatoes, pan-fried until golden and served with apple sauce and powdered sugar. Taste the batter for sweetness and add more sugar if needed.

Ingredients

500 gricotta (quark)
3boiled medium potatoes
200 gall-purpose flour
6 tablespoonssugar (add more if not sweet enough)
1egg
1 pinchsalt
2 tablespoonssemolina
2 tablespoons (30 ml)lemon juice
1 tablespoonbaking powder
to tasteraisins
for fryingsunflower oil, for frying
to serveapple sauce, to serve
to dustpowdered sugar, to dust

Instructions

  1. Mash the boiled potatoes.
  2. Add the ricotta (quark), sugar and lemon juice and mix well. Taste for sweetness and add more sugar if it is not sweet enough.
  3. When the sweetness is right, add the egg, flour, salt, semolina, baking powder and raisins and mix into a batter.
  4. With floured hands, shape into small fritters and fry in sunflower oil until golden on both sides.
  5. Serve with apple sauce and a dusting of powdered sugar.
