Hooters Buffalo Shrimp

A copycat of Hooters' crispy fried buffalo shrimp: large shrimp coated in a seasoned cornmeal batter, deep-fried until golden and tossed in a spicy buttery hot-sauce buffalo glaze.

Ingredients

20large shrimp, peeled and deveined
1egg, beaten
1 tablespoon (15 ml) tbspsandwich mustard
2 teaspoons (10 ml) tspcreole seasoning
2 teaspoons (10 ml) tspblack pepper
2 teaspoons (10 ml) tspgarlic powder
2 teaspoons (10 ml) tsponion powder
for fryingcooking oil
to garnishminced parsley, to garnish
1 cup (125 g) cupcornmeal (for batter)
1 cup (125 g) cupflour (for batter)
2 teaspoons (10 ml) tspcreole seasoning (for batter)
1 teaspoon (5 ml) tspblack pepper (for batter)
1 stick (115 g)unsalted butter (for buffalo sauce)
1 cup (240 ml) cuphot sauce (for buffalo sauce)
1/2lemon, juiced (for buffalo sauce)
1 teaspoon (5 ml) tspgarlic powder (for buffalo sauce)

Instructions

  1. Preheat oil in a large pot to 175°C (350°F).
  2. Rinse, peel and devein the shrimp, leaving the tail intact if desired.
  3. Mix the beaten egg with the sandwich mustard.
  4. Place the shrimp in a large bowl and coat with the spices and the egg/mustard mixture; set aside.
  5. To make the corn flour batter, combine the cornmeal, flour, creole seasoning and black pepper in a freezer bag and shake well.
  6. Dip the shrimp in the corn flour batter, coat well and lower into the hot oil, being careful not to overcrowd the pan (work in 2-3 batches).
  7. Cook the shrimp for 2 minutes on each side, then drain on a paper napkin.
  8. To make the buffalo sauce, combine the butter, hot sauce, lemon juice and garlic powder in a saucepan, bring to a boil, reduce the heat and simmer until the butter melts; stir.
  9. Immediately toss the fried shrimp in the buffalo sauce and garnish with minced parsley.
