A copycat of Hooters' crispy fried buffalo shrimp: large shrimp coated in a seasoned cornmeal batter, deep-fried until golden and tossed in a spicy buttery hot-sauce buffalo glaze.

Ingredients
| 20 | large shrimp, peeled and deveined |
| 1 | egg, beaten |
| 1 tablespoon (15 ml) tbsp | sandwich mustard |
| 2 teaspoons (10 ml) tsp | creole seasoning |
| 2 teaspoons (10 ml) tsp | black pepper |
| 2 teaspoons (10 ml) tsp | garlic powder |
| 2 teaspoons (10 ml) tsp | onion powder |
| for frying | cooking oil |
| to garnish | minced parsley, to garnish |
| 1 cup (125 g) cup | cornmeal (for batter) |
| 1 cup (125 g) cup | flour (for batter) |
| 2 teaspoons (10 ml) tsp | creole seasoning (for batter) |
| 1 teaspoon (5 ml) tsp | black pepper (for batter) |
| 1 stick (115 g) | unsalted butter (for buffalo sauce) |
| 1 cup (240 ml) cup | hot sauce (for buffalo sauce) |
| 1/2 | lemon, juiced (for buffalo sauce) |
| 1 teaspoon (5 ml) tsp | garlic powder (for buffalo sauce) |
Instructions
- Preheat oil in a large pot to 175°C (350°F).
- Rinse, peel and devein the shrimp, leaving the tail intact if desired.
- Mix the beaten egg with the sandwich mustard.
- Place the shrimp in a large bowl and coat with the spices and the egg/mustard mixture; set aside.
- To make the corn flour batter, combine the cornmeal, flour, creole seasoning and black pepper in a freezer bag and shake well.
- Dip the shrimp in the corn flour batter, coat well and lower into the hot oil, being careful not to overcrowd the pan (work in 2-3 batches).
- Cook the shrimp for 2 minutes on each side, then drain on a paper napkin.
- To make the buffalo sauce, combine the butter, hot sauce, lemon juice and garlic powder in a saucepan, bring to a boil, reduce the heat and simmer until the butter melts; stir.
- Immediately toss the fried shrimp in the buffalo sauce and garnish with minced parsley.
