Ingredients
| 1 1/2 cups (190 g) | all-purpose flour |
| 3 1/2 tsp | baking powder |
| 1 tsp | salt |
| 1 tbsp | granulated sugar |
| 1 1/4 cups (300 ml) | milk |
| 1 | big egg |
| 3 tbsp (45 g) | unsalted butter, melted |
| 1 tsp | vanilla extract |
| 1 | ripe banana, mashed |
| 1/2 cup (75 g) | strawberries, diced |
| 1/2 cup (80 g) | pineapple, diced |
| 1/2 cup (85 g) | chocolate chips |
| to taste | whipped cream |
| to taste | maraschino cherries |
Instructions
- In a big mixing bowl, whisk together the flour, baking powder, salt and sugar.
- Separately, combine the milk, egg, melted butter and vanilla extract.
- Stir the wet ingredients into the dry ingredients until just combined.
- Gently fold in the mashed banana, strawberries, pineapple and chocolate chips.
- Lightly grease a griddle or nonstick skillet with butter or oil over medium heat.
- For every pancake, pour 1/4 cup (60 ml) of batter onto the griddle. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
- To serve, top the Banana Split Pancakes with whipped cream and a maraschino cherry.
