A copycat of IHOP's Banana Split Pancakes — fluffy pancakes folded with mashed banana, strawberries, pineapple and chocolate chips, topped with whipped cream and a maraschino cherry.

Ingredients

1 1/2 cups (190 g)all-purpose flour
3 1/2 tspbaking powder
1 tspsalt
1 tbspgranulated sugar
1 1/4 cups (300 ml)milk
1big egg
3 tbsp (45 g)unsalted butter, melted
1 tspvanilla extract
1ripe banana, mashed
1/2 cup (75 g)strawberries, diced
1/2 cup (80 g)pineapple, diced
1/2 cup (85 g)chocolate chips
to tastewhipped cream
to tastemaraschino cherries

Instructions

  1. In a big mixing bowl, whisk together the flour, baking powder, salt and sugar.
  2. Separately, combine the milk, egg, melted butter and vanilla extract.
  3. Stir the wet ingredients into the dry ingredients until just combined.
  4. Gently fold in the mashed banana, strawberries, pineapple and chocolate chips.
  5. Lightly grease a griddle or nonstick skillet with butter or oil over medium heat.
  6. For every pancake, pour 1/4 cup (60 ml) of batter onto the griddle. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
  7. To serve, top the Banana Split Pancakes with whipped cream and a maraschino cherry.
