
IHOP's Caramel Apple Pancakes
Fluffy buttermilk pancakes studded with diced apples and layered with caramel sauce, a copycat of IHOP's caramel apple pancakes. Serves 4, ready in about 30 minutes.

Ingredients
| 2 cups (250 g) | all-purpose flour |
| 2 tbsp | granulated sugar |
| 2 tsp | baking powder |
| 1/2 tsp | baking soda |
| 1/2 tsp | salt |
| 1 1/2 cups (360 ml) | buttermilk |
| 1/2 cup (120 ml) | milk |
| 2 | large eggs |
| 1 tsp | vanilla extract |
| 2 | medium apples, peeled, cored and diced |
| 1/2 cup (120 ml) | caramel sauce |
| to taste | whipped cream, for topping (optional) |
Instructions
- In a large mixing bowl combine the flour, sugar, baking soda, baking powder and salt.
- In a separate bowl combine the buttermilk, milk, eggs and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir only until barely blended; do not overmix, a few lumps are fine.
- Gently fold in the diced apples.
- Preheat a griddle or nonstick skillet over medium heat and lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter per pancake onto the hot griddle. Cook until bubbles appear on the surface, then flip and cook the second side until golden brown. Repeat with the remaining batter.
- Stack the pancakes, spreading a layer of caramel sauce between each one. Top with more caramel sauce and whipped cream if desired.
