Ingredients
| 1 1/4 cups (155 g) | all-purpose flour |
| 1 tbsp | granulated sugar |
| 1 tsp | baking powder |
| 1 tsp | baking soda |
| 1/4 tsp | salt |
| 1 1/4 cups (300 ml) | buttermilk |
| 1/4 cup (60 ml) | whole milk |
| 1 | large egg |
| 1/4 cup (60 ml) | vegetable oil |
| to taste | butter and maple syrup, for serving |
Instructions
- Combine the flour, sugar, baking soda, baking powder and salt in a big bowl.
- In a separate bowl, whisk together the buttermilk, whole milk, egg and vegetable oil.
- Add the liquid components to the dry ingredients and combine only until barely blended; do not overmix, some lumps may remain.
- Preheat a nonstick griddle or skillet over medium heat and lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter per pancake onto the griddle. Cook until surface bubbles appear, flip, and cook 1-2 minutes more until golden brown.
- Remove and keep warm; repeat with the remaining batter. Serve with butter and maple syrup.
