Panera Bread Copycat Potato Soup

An Instant Pot copycat of Panera Bread's loaded baked potato soup - creamy, cheesy and ready in minutes.

Ingredients

4 cups960 mlchicken broth
4 cups960 mlpeeled and cubed potatoes
1/2 tsp2.5 mlsalt
1/4 tsp1.3 mlwhite pepper
1/4 tsp1.3 mlblack pepper
—oregano
1small onion, chopped
4 clovesgarlic
1 cup240 mlcooking cream or whole milk (I made it with cream)
250 gcream cheese (I use Philadelphia), at room temperature
1 tbsp15 mlolive oil

Instructions

  1. Set the Instant Pot to the sauté function.
  2. Add the olive oil and the onion and sauté for about a minute.
  3. Add the broth, the seasonings and the potatoes.
  4. Cook on manual high pressure for 10 minutes, or use the soup button.
  5. Let the pressure release naturally (you can release any remaining pressure manually after 15 minutes).
  6. Switch back to sauté.
  7. Mash the potatoes and add the cream cheese. Keep sautéing until the cheese has melted.
  8. Continue to sauté until the cheese has melted. Add the cooking cream.
  9. Serve immediately with grated cheddar, chopped bacon or finely sliced chives.

SERVE ANGELICA'S PORTION WITHOUT CHEESE.
