Ingredients
| 4 cups | 960 ml | chicken broth |
| 4 cups | 960 ml | peeled and cubed potatoes |
| 1/2 tsp | 2.5 ml | salt |
| 1/4 tsp | 1.3 ml | white pepper |
| 1/4 tsp | 1.3 ml | black pepper |
| â | oregano | |
| 1 | small onion, chopped | |
| 4 cloves | garlic | |
| 1 cup | 240 ml | cooking cream or whole milk (I made it with cream) |
| 250 g | cream cheese (I use Philadelphia), at room temperature | |
| 1 tbsp | 15 ml | olive oil |
Instructions
- Set the Instant Pot to the sauté function.
- Add the olive oil and the onion and sauté for about a minute.
- Add the broth, the seasonings and the potatoes.
- Cook on manual high pressure for 10 minutes, or use the soup button.
- Let the pressure release naturally (you can release any remaining pressure manually after 15 minutes).
- Switch back to sauté.
- Mash the potatoes and add the cream cheese. Keep sautéing until the cheese has melted.
- Continue to sauté until the cheese has melted. Add the cooking cream.
- Serve immediately with grated cheddar, chopped bacon or finely sliced chives.
