Ingredients
| 1½ cups (190 g) | all-purpose flour |
| 1 tsp | chili powder |
| ½ tsp | celery salt |
| 1 tbsp | paprika |
| ½ tsp | sage |
| 1 tsp | black pepper |
| 2 tsp | onion salt |
| ½ tsp | garlic powder |
| ½ tsp | ground allspice |
| ½ tsp | dried basil |
| 1 tbsp | kosher salt |
| ½ tsp | oregano |
| ½ tsp | marjoram |
| 1 tbsp | brown sugar |
| 1 | egg white |
| 2 each | whole chicken (breasts, drumsticks, wings, and thighs) |
| 2 quarts (1.9 L) | neutral oil for frying |
Instructions
- Heat the frying oil to 350°F (177°C). Thoroughly mix the brown sugar, all of the spices, flour, and salt.
- Dredge the chicken pieces in the egg white and transfer them to the flour mixture. Let sit for 5 minutes so the crust can dry a bit.
- Fry the chicken in batches: breasts and wings take 10–13 minutes, while drumsticks and thighs take 12–15 minutes. Drain the chicken on a few paper towels before serving it piping hot. Pairs well with KFC's gravy and dipping sauce.
