KFC Zinger Burger (Copycat)

A copycat of KFC's Zinger Burger: overnight-marinated chicken breasts breaded and deep-fried crispy, stacked in a seeded bun with lettuce and mayonnaise or KFC zinger sauce. Includes a bonus 11-herb-and-spice seasoning blend from Brett Williams for the fried chicken.

Ingredients

3 (about 500 g / half a kg)boneless chicken breasts
1 teaspoonpepper
1 teaspoonsalt
2 tablespoonsWorcestershire sauce
1 teaspoonmustard powder or all-spice powder
2 tablespoonsflour
1egg
1 1/2 cups (150 g)breadcrumbs
6soft seeded burger buns
to servemayonnaise or KFC zinger sauce

Instructions

  1. Prepare the chicken breasts by slicing them if they are too large. Marinate with the pepper, salt, mustard or all-spice powder, and Worcestershire sauce. Leave overnight or at least 4 hours.
  2. To prepare the batter, beat together an egg and 2 tablespoons of water, then set aside.
  3. Place the marinated chicken breasts in flour and coat generously. Dip them into the egg and then into the breadcrumbs until well coated.
  4. Deep-fry the coated chicken breasts in hot oil over medium to high heat until golden brown and crispy.
  5. Slice the buns in half and lightly toast, then stack the burger: lettuce at the top, then the chicken and finally the mayonnaise or KFC zinger sauce. Add sliced American cheese for a cheesy zinger.

Tip: You can store the raw marinated chicken fillets in the freezer; when you fancy a zinger, simply fry the chicken and assemble in a few minutes.

Bonus KFC-style seasoning (Brett Williams): blend 2/3 tbsp salt, 1 tbsp black pepper, 3 tbsp white pepper, 4 tbsp paprika, 2 tbsp garlic salt, 1 tbsp ground ginger, 1 tbsp celery salt, 1 tbsp dried mustard, 1/2 tbsp basil, 1/2 tbsp thyme, 1/3 tbsp oregano into one cup of flour (blend the herbs and pepper as fine as possible). Dip chicken in egg and milk, then in the flour, and fry straight away — cold batter is key. Ready in about 11 minutes or until it starts to float. A pressure cooker is said to be the key to the taste.
