
McDonald's Curry Sauce
A copycat of McDonald's sweet curry dipping sauce built on a mango base with honey, spices and tomato paste, blended smooth and briefly simmered.

Ingredients
| 4 cups (500 g) | chopped mango chunks (fresh or frozen) |
| 1/2 cup (120 ml) | raw honey or maple syrup |
| 1 teaspoon | raw apple cider vinegar |
| 2 teaspoons | sea salt |
| 2 tablespoons | tomato paste / puree |
| 1 tablespoon | lemon juice (juice from half a small lemon) |
| 2-3 teaspoons | curry powder, to taste |
| 2 teaspoons | onion powder |
| 1 teaspoon | ground coriander |
| 1 teaspoon | garlic powder |
| 1 teaspoon | smoked paprika |
Instructions
- If using frozen mango, either leave it to defrost or add it to a small saucepan over low heat and simmer until defrosted.
- Add all of the ingredients to a blender and blend for 1 minute, or until smooth. Alternatively, use a hand blender.
- Pour the curry sauce into a small saucepan and simmer over low heat for 4-5 minutes.
- Transfer to a large glass jar or other sealed container and store in the fridge for up to 5 days.
- Or transfer to a large ice cube tray or small pots and freeze in small portions. To use, either defrost for 2-6 hours before use or warm gently in a small pan on the stove.
