
Mochi Red Bean Pancakes
Glutinous rice flour pancakes filled with red bean paste and pan-fried until golden. A very simple recipe, good as a snack or breakfast item.

Ingredients
| 150 grams | glutinous rice flour (糯米ē²) | |
| 150 grams | plain water (ē½ę°“) | |
| 30 grams | rice flour (ē²ē±³ē²) - optional | |
| 30 grams | white castor sugar (ē½ē³) | |
| 2 tablespoons | 30 ml | cooking oil (é£ēØę²¹) |
| 180 grams | red bean paste (ēŗ¢č±č) | |
| 1 tablespoon | 15 ml | sesame seeds (čéŗ») ā optional |
Instructions
- In a pot, add water, sugar and cooking oil. Bring to a boil. When the water boils, add the glutinous rice flour and rice flour, stir until well mixed. Stir out and knead until it forms a pliable smooth dough. Divide into 10 equal pieces.
- Divide the red bean paste into 10 equal pieces. Take a dough, shape round, use hand to press it, put a red bean paste, seal the edges and use a rolling pin to roll it flat with about 1 cm thick. If you prefer, wet the top with a bit of water and sprinkle some sesame seeds on top of the pancake.
- In a non-stick pan, lightly grease the pan with some cooking oil. Use medium heat to pan fry the pancake until the side is slightly golden brown. Turn it on the side and pan fry until golden brown. Best served when the pancake is hot.
