Olive Garden - Chocolate Brownie Lasagna

A copycat of Olive Garden's chocolate brownie lasagna: three layers of rich chocolate cake studded with chocolate chips, filled and frosted with a meringue-powder buttercream. Serves 8.

Ingredients

6 cups (720 g)cake flour, sifted
5 1/4 cups (1050 g)sugar
2 1/4 cups (200 g)Hershey's cocoa
2 tablespoons (28 g)baking soda
4 1/2 cups (1080 ml)milk
1 1/2 cups (340 g)butter
1 dozen (12)large eggs
1 tablespoon (15 ml)vanilla extract
2 cups (340 g)semi-sweet chocolate chips
2/3 cup (160 ml)water (for buttercream)
1/4 cup (35 g)meringue powder
12 cups (1440 g)confectioners' sugar, sifted
1 1/4 cups (240 g)shortening
3/4 teaspoonsalt
1 teaspoon (5 ml)clear almond extract
1 teaspoon (5 ml)clear vanilla extract
1 teaspoon (5 ml)colorless butter flavor

Instructions

  1. To make the cake, preheat the oven to 175°C (350°F). Grease three 25 cm (10-inch) springform pans with cooking spray.
  2. Stir the sifted cake flour, sugar, cocoa and baking soda into a mixing bowl. Add the butter and combine. Add the eggs, vanilla and milk and mix thoroughly.
  3. Transfer about 5 cups of batter into the pans. Bake for 40-50 minutes, or until an inserted toothpick comes out clean. Cool for 10 minutes before removing from the pans.
  4. Make the buttercream: using an electric mixer, whip the water and meringue powder at high speed until peaks form. Slowly add 4 cups of the confectioners' sugar and beat at low speed. Add the shortening, then the remaining sugar. Add the salt and flavorings and continue to beat at low speed until smooth.
  5. Thin out half of the frosting with a little water (this is used to fill the layers between the cakes).
  6. Assemble by placing one cake on a platter. Spread thinned frosting on top and sprinkle with some semi-sweet chocolate chips, then add the second layer. Frost the top of the second layer with thinned frosting.
  7. Place the third layer on top. Frost the top with the remaining buttercream and sprinkle with more chocolate chips. Cut into wedges and serve.
