
Olive Garden Fried Mozzarella
A copycat of Olive Garden's Fried Mozzarella: thick triangles of mozzarella dredged in a flour-cornstarch blend, dipped in egg wash and coated in seasoned Italian breadcrumbs, then deep-fried just seconds until golden and served with marinara. Chilling the cheese before battering helps keep it from oozing out.

Ingredients
| 450 g (16 oz) | mozzarella cheese |
| 2 | eggs, beaten |
| 60 ml (1/4 cup) | water |
| 150 g (1 1/2 cups) | Italian breadcrumbs |
| 1/2 tsp | garlic salt |
| 1 tsp | Italian seasoning |
| 85 g (2/3 cup) | flour |
| 40 g (1/3 cup) | cornstarch |
Instructions
- If your cheese is in a brick, slice it thick and cut crossways into triangles. Beat the eggs with the water and set aside. Mix the breadcrumbs, garlic salt and Italian seasoning and set aside. Blend the flour with the cornstarch and set aside.
- Heat vegetable oil for deep frying to 182°C (360°F).
- Dip the cheese in the flour-cornstarch blend, then in the egg wash, then coat with the breadcrumbs.
- Carefully place the cheese in the hot oil and fry until golden - this takes just a few seconds, so watch carefully. Remove and drain.
- Serve with your favorite Italian spaghetti (marinara) sauce. Tips: Chill the cheese before battering to help it not melt during frying. You can also fry cheeses like paneer, queso blanco or halloumi, which have high melting points. Make sure the cheese is well battered so it does not ooze out. Do not fry too many pieces at once, or the oil temperature may drop too much.
