Olive Garden Shrimp & Chicken Carbonara

A rich copycat of Olive Garden's carbonara — linguine tossed in a creamy Parmesan and egg-yolk sauce with sautĂ©ed chicken, jumbo shrimp, smoked bacon and a splash of Sauvignon Blanc. Serves 6, about 1 hour.

Ingredients

1 lb (450 g)jumbo shrimp
8 slicessmoked bacon
1 lb (450 g)chicken breast halves
4 tablespoonsolive oil (divided)
3 tablespoonsgarlic (divided)
2 tablespoonsItalian seasoning
16 oz package (450 g)linguine pasta
1onion
1.5 cups (360 ml)heavy whipping cream
4egg yolks
1.5 cups (150 g)grated Parmesan cheese
1 pinch / as desiredfreshly cracked black pepper and salt
1/4 cup (60 ml)Sauvignon Blanc wine

Instructions

  1. Peel and devein the shrimp and dice the bacon. Discard the bones and skin from the chicken and chop it into bite-sized pieces.
  2. Warm 1 tablespoon oil in a skillet over medium-high heat. Cook and stir the chicken with 1 tablespoon minced garlic and 1 tablespoon Italian seasoning until done (6–8 min). Transfer to a bowl.
  3. Warm 1 tablespoon garlic and 1 tablespoon olive oil in the same skillet. Fry the shrimp until pinkish-red (6–8 min) and add to the chicken.
  4. Bring a large pot of water to a boil, add the remaining 2 tablespoons oil, and cook the linguine until al dente (10–12 min). Drain in a colander.
  5. Toss the bacon into the pan and cook until just crispy, not crunchy (6 min). Drain on paper towels.
  6. Dice and sauté the onion in the bacon grease until translucent (about 5 min). Meanwhile, mix the cream, Parmesan, egg yolks, salt, pepper and remaining Italian seasoning in a bowl.
  7. Add the wine to the pan with the onions, raise the heat, bring to a boil and simmer until mostly evaporated (about 2 min).
  8. Add the creamy egg mixture, reduce the heat and simmer until the sauce thickens (3–5 min).
  9. Add the chicken and shrimp and toss to coat. Serve over a platter of the pasta.
