Ingredients
| 1 pound (450 g) | Italian sausage, sweet or hot |
| 1/4 pound (115 g) | bacon |
| 1 1/2 pounds (680 g) | russet potatoes, peeled, halved lengthwise then sliced 1/4-inch thick |
| 1 cup (150 g) | chopped onion |
| 1 1/2 quarts (1.4 L) | chicken stock |
| 2 cups (130 g) | kale, chopped (can use Swiss chard) |
| 1 cup (240 ml) | heavy cream or half and half |
| to taste | salt and pepper |
Instructions
- In a large skillet over medium heat, brown the sausage and bacon together. Drain off the excess fat and transfer to a slow cooker.
- Add the sliced potatoes, onions and chicken stock, and cook on low for about 3 to 3 1/2 hours.
- About 30 to 60 minutes before serving, add the chopped kale and the heavy cream or half and half. Season with salt and pepper to taste.
