
Outback Steakhouse Aussie Fries
A copycat of Outback Steakhouse's Aussie Fries: crispy French fries piled with melted colby jack cheese and crumbled bacon. Includes a suggested spicy ranch dipping sauce from Jane Coyle.

Ingredients
| 900 g (2 pounds) | french fries |
| 1 cup (115 g) | colby jack cheese, shredded |
| 115 g (4 ounces) | bacon, cooked crisp |
| for frying | vegetable oil, for frying |
Instructions
- Divide the bag of fries in half and use the other half later.
- Heat oil to 175°C (350°F). If you do not have a thermometer, make sure the oil is hot enough so that a fry set into the oil cooks immediately; if it sinks and barely bubbles, it is not hot enough.
- Fry the potatoes in small batches. They are done when golden brown and floating to the top (a Dutch oven works well). Drain the potatoes on paper towels and keep them warm in the oven while the rest fry.
- When all the fries are cooked and drained, place them on a platter.
- Salt the fries if you like and sprinkle on the cheese and cooked bacon.
- Pop them back into a warm oven until the cheese begins to melt.
- Dipping sauce (optional, from Jane Coyle): combine one 475 ml (16 oz) bottle ranch dressing with 2 tsp paprika, 1 tsp cayenne, 1 tsp dried thyme, 1 tsp dried oregano, 1 tsp white pepper, 1 tsp black pepper, 1 tbsp kosher salt, 1 tbsp garlic powder and 1 tbsp onion powder. Refrigerate overnight for the best flavor.
