The batter in these paleo apple-cinnamon waffles is low in sugar but still very tasty thanks to the apple. You can prepare the batter and leave it in the fridge overnight, so you can quickly make breakfast during a busy week. - Heat the waffle iron.
- Mix the almond flour, tapioca starch, coconut shreds, cinnamon, salt and baking powder.
- In another bowl mix the yolks, vanilla, milk, apple and melted butter. Add them to the dry ingredients to form a batter.
- Beat the egg whites to stiff peaks and fold them into the batter.
- Lightly grease the waffle plates with butter and pour enough batter to cover the plates.
- Cook about 2 to 3 minutes, until golden and the waffles release easily from the plate.
- Repeat with the remaining batter.
- Serve warm with fresh fruit or honey.
