Panera Apple Raisin Cobblestone Muffins

A copycat of Panera's Cobblestone muffins: an enriched yeast dough torn into little balls, rolled in cinnamon sugar, layered with apple and raisin filling, baked and finished with a powdered sugar drizzle.

Ingredients

4eggs
1 cup (200 g)granulated sugar (for dough)
1 tspkosher salt
2 cups (480 ml)skim milk, warmed
4 oz (115 g)butter, melted (for dough)
7 cups (875 g)flour, divided
2 pkg (0.25 oz / 7 g each)quick rise yeast
3/4 cup (170 g)butter, melted (for coating)
1 cup (200 g)brown sugar
1 cup (200 g)granulated sugar (for coating)
1/4 cup (28 g)cinnamon
2apples, cored and diced (skin on)
1/2 cup (75 g)raisins
1/2 cup (75 g)golden raisins
1 cup (120 g)powdered sugar
2 Tbsp (30 ml)milk (for icing)

Instructions

  1. In a large mixing bowl, mix the yeast with the warmed milk. Add the eggs, sugar and salt, then mix in the melted butter and 3 cups of the flour. Add the remaining flour until just combined, trying not to over mix. Turn the dough out into a greased bowl, cover and let rise until doubled in size.
  2. Line large muffin cups with liners or parchment paper. Put the melted butter in one bowl, and combine the brown sugar, granulated sugar and cinnamon in a separate bowl. Pinch off 2 Tbsp sized pieces of dough and roll into balls. Drop each ball into the melted butter, then into the cinnamon sugar mixture, and place in the bottom of a muffin cup. Repeat until you have 3 balls in the bottom of each cup.
  3. In a small bowl, mix the raisins with the apples. Place a tablespoon of filling onto the dough balls. Add 4 more dough balls to the top of each muffin and sprinkle each with 1 Tbsp of the raisin/apple filling. When all the muffins are ready, bake in a 175°C (350°F) oven for about 25 minutes.
  4. Remove and allow to cool. In a small bowl, whisk together the powdered sugar and milk. Drizzle over the muffins and enjoy!
