| 3 cups (375 g) | bread flour |
| 1 cup (240 ml) | warm water |
| 2 1/4 tsp (1 packet, 7 g) | active dry yeast |
| 1 tbsp (12 g) | sugar |
| 1 tsp | salt |
| 1 tbsp (15 ml) | olive oil |
| 1 1/2 cups (150 g) | shredded Asiago cheese, divided |
Instructions

- Dissolve the yeast and sugar in the warm water and let stand 5–10 minutes until foamy.
- Add the flour, salt and olive oil, then knead into a smooth, elastic dough (about 8–10 minutes). Cover and let rise until doubled, about 1 hour.
- Knead in about 1 cup (100 g) of the shredded Asiago, reserving the rest. Shape into a round or oval loaf on a lined baking sheet.
- Cover and let rise 30–45 minutes until puffy. Meanwhile, preheat the oven to 200°C (400°F).
- Slash the top of the loaf, then scatter the reserved Asiago over the top.
- Bake for 30–35 minutes, until deep golden and the cheese crust is melted and browned. Cool slightly before slicing.
