Panera Bistro French Onion Soup

A copycat of Panera's bistro-style French onion soup: sweet onions slowly caramelized in butter and olive oil, simmered in beef broth with sherry and a splash of balsamic, then topped with cheese croutons and shredded gruyere and asiago.

Ingredients

4sweet onions, sliced
1 tablespoon (15 g) tbspbutter
1 tablespoon (15 ml) tbspolive oil
1 teaspoon (5 g) tspsugar
1 teaspoon (5 ml) tspthyme
1/2 teaspoon (2.5 ml) tspbasil
1800 ml mlreduced-sodium beef broth
1/4 cup (60 ml) cupsherry
1 tablespoon (15 ml) tbspbalsamic reduction
for servingcheese croutons
for garnishshredded gruyere and asiago, for garnish

Instructions

  1. In a large pot, sauté the sliced onions with the butter and olive oil.
  2. Add the sugar to help the onions caramelize.
  3. Cook for 20-30 minutes until nicely browned, then add the thyme and basil and season with salt and pepper to taste; cook for 1 minute more.
  4. Add the beef broth and simmer for 30 minutes. Add the sherry and the balsamic reduction and simmer for a further 5 minutes.
  5. Pour into individual bowls, garnish with cheese croutons and the shredded gruyere and asiago, and serve immediately. For melted cheese, broil the soup for a minute.
