Panera Bread's Tomato Basil Bread

A copycat of Panera Bread's rustic tomato basil loaf, studded with sun-dried tomatoes and fresh basil. Makes 1 loaf; total time about 3 hours 30 minutes.

Ingredients

3 1/2 cups (440 g)all-purpose flour
2 tspactive dry yeast
2 tspsalt
2 tspsugar
2 tbsp (30 ml)olive oil
1/4 cup (30 g)sun-dried tomatoes, lightly chopped
1/4 cup (6 g)fresh basil, chopped
1 1/2 cups (360 ml)warm water

Instructions

  1. Combine the flour, yeast, salt and sugar in a large mixing bowl. Add the sun-dried tomatoes, olive oil and fresh basil to the bowl.
  2. Pour the warm water in a slow, steady stream while stirring the mixture until the dough comes together, then turn it out onto a floured surface.
  3. Knead for about 10 minutes until the dough is smooth and elastic. Place it in a greased bowl, cover with a clean kitchen towel and let rise in a warm location for about 2 hours, or until doubled in size.
  4. Set the oven to 200°C (400°F). Punch down the dough to remove any air bubbles, shape it into a loaf and set it on a baking sheet. Cover with the kitchen towel and let rise for an extra hour.
  5. Bake in the preheated oven for 30-35 minutes, or until golden brown. Remove from the oven and let it cool on a wire rack before slicing.
