Panera Copycat Broccoli Cheddar Soup
An Instant Pot copycat of Panera Bread's creamy broccoli cheddar soup, thickened with cream cheese instead of a roux. Serve with bread or crackers.

Ingredients
| 450 g (1 pound) | fresh broccoli, chopped |
| 225 g (8 oz) | cheddar cheese |
| 1 | small onion, chopped |
| 3 cups (720 ml) | chicken broth |
| 2 cups (480 ml) | milk or heavy cream |
| 1 cup (110 g) | shredded carrots |
| 2 tbsp (30 ml) | hot sauce (optional) |
| 1/4 tsp | nutmeg |
| 225 g (8 oz) | cream cheese |
Instructions
- Place the chopped onion, carrots, broccoli, nutmeg and chicken broth in the pot.
- Add 8 oz (225 g) of the cream cheese.
- Set to Manual high pressure for 15 minutes.
- Do a quick release and stir in the milk or heavy cream.
- Return the pot to saute for about 5 minutes; do not bring to a boil.
- Stir in the cheddar cheese and hot sauce once the cheese has melted.
- Serve with bread or crackers.
Note: A dash of hot sauce stirred in after the cheese melts enhances the flavor. If you add the 8 oz (225 g) of cream cheese you will not need any other thickener.
