
Starbucks Banana Walnut Bread (Copycat)
A copycat of Starbucks' banana walnut bread, baked in a loaf pan with plenty of walnuts. The author notes this version uses margarine for a richer loaf and suggests an optional sprinkle of cinnamon sugar. Makes one 8x4 inch loaf.

Ingredients
| 1 3/4 cups (220 g) | all-purpose flour (bread flour recommended) |
| 2 teaspoons | baking powder |
| 1/2 teaspoon | baking soda |
| 1/2 teaspoon | salt |
| 1 cup (225 g) | mashed ripe bananas (about 2-3 bananas) |
| 2/3 cup (135 g) | sugar |
| 1/3 cup (75 g) | margarine |
| 2 tablespoons (30 ml) | milk |
| 2 | eggs |
| 1 cup (120 g) | chopped walnuts, divided |
Instructions
- Preheat the oven to 175°C (350°F).
- In a medium bowl, combine the dry ingredients (flour, baking powder, baking soda and salt); stir together. In another medium bowl, cream the margarine and sugar with a mixer until light and fluffy. Add the mashed bananas, eggs and milk and mix well.
- Add half the dry ingredients to the wet ingredients and mix just until the flour is incorporated, then add the remaining flour and 1/2 cup of the walnuts and blend until everything is combined. Do not over-stir.
- Pour the batter into a greased 20x10 cm (8x4 inch) loaf pan and top with the remaining chopped walnuts. Bake at 175°C (350°F) for 55-60 minutes, or until a toothpick inserted near the center comes out clean.
- Cool 10 minutes on a wire rack. Note from the author: Starbucks does not make their banana bread with butter, but margarine makes it richer; a sprinkle or two of cinnamon and sugar (not in their recipe) adds a little something extra.
