Ingredients

1 cup (240 ml)water
1 cup (200 g)brown sugar
1 1/2 teaspoons (more or less to taste)ground cinnamon
from a previous batchvanilla bean shells (optional)
3/4 cup (180 ml)milk (e.g. 1%)
to fill the mugbrewed coffee or espresso

Instructions

  1. Make the syrup: Combine the water, brown sugar and ground cinnamon in a saucepan. If you like, toss in used vanilla bean shells to let the flavor soak in. Cook until it reduces to a syrup. (The recipe can be doubled.)
  2. Pour a little of the syrup into some milk and stir. About 3/4 cup (180 ml) milk with 1 tablespoon syrup makes enough for about 4 lattes — adjust the amounts to taste and sweetness.
  3. Microwave the milk for about 4 minutes until nicely steamed.
  4. Beat with an electric mixer for about 3 minutes until nice and frothy.
  5. Have your coffee ready (espresso or plain brewed coffee both work). Pour some of the frothy milk into a mug, then fill the rest of the mug with coffee. Add extra foam on top if you like.
