Ingredients
| 1 cup (240 ml) | water |
| 1 cup (200 g) | brown sugar |
| 1 1/2 teaspoons (more or less to taste) | ground cinnamon |
| from a previous batch | vanilla bean shells (optional) |
| 3/4 cup (180 ml) | milk (e.g. 1%) |
| to fill the mug | brewed coffee or espresso |
Instructions
- Make the syrup: Combine the water, brown sugar and ground cinnamon in a saucepan. If you like, toss in used vanilla bean shells to let the flavor soak in. Cook until it reduces to a syrup. (The recipe can be doubled.)
- Pour a little of the syrup into some milk and stir. About 3/4 cup (180 ml) milk with 1 tablespoon syrup makes enough for about 4 lattes ā adjust the amounts to taste and sweetness.
- Microwave the milk for about 4 minutes until nicely steamed.
- Beat with an electric mixer for about 3 minutes until nice and frothy.
- Have your coffee ready (espresso or plain brewed coffee both work). Pour some of the frothy milk into a mug, then fill the rest of the mug with coffee. Add extra foam on top if you like.
