
Starbucks Ham and Cheddar Sous Vide Egg Bites
A copycat of Starbucks' silky sous vide egg bites, blended with cottage cheese and three cheeses, studded with ham and red bell pepper, then optionally finished under the broiler with Gruyère.

Ingredients
| 4 | eggs |
| 4 tablespoons (60 g) | cottage cheese |
| 1/4 cup (30 g) | shredded Monterey Jack cheese |
| 1/4 cup (30 g) | shredded Cheddar cheese |
| 1/4 teaspoon | salt |
| 1 1/2 tablespoons (about 20 g) | thinly sliced ham |
| 1 teaspoon | minced red bell pepper |
| 1/4 cup (30 g) | shredded Gruyère cheese (to broil) |
Instructions
- Set your sous vide to 167°F (75°C). This will take some time to heat, so prepare the recipe while it heats up.
- Into a blender add the eggs, cottage cheese, Monterey Jack cheese, Cheddar cheese and salt.
- Toss in the small piece of red bell pepper and let the blender chop it up.
- Purée until it is a uniform mixture. Turn off the blender and sprinkle in the chopped ham.
- Spray 4 small canning jars (half-pint jelly jars work well) with non-stick spray. Pour the egg mixture into the jars. Wipe the rims clean, then place the lids on.
- Place the jars into the sous vide bath. Once it has reached 167°F (75°C), cook the eggs for about 35 minutes, until completely set. If they seem soft or undercooked, cook an additional 5 minutes.
- Remove the jars from the bath.
- If desired, pop the egg bites under a broiler, top each with a bit of shredded Gruyère and cook until the cheese begins to brown, just before serving.
