Starbucks Honey Bagels (Copycat)

A copycat of Starbucks' honey bagels: chewy boiled-then-baked bagels sweetened with honey and topped with minced onion, sesame and poppy seeds. Makes 12.

Ingredients

1 tablespoonactive dry yeast
1-1/4 cups (300 ml)warm water (43-46°C / 110-115°F)
3 tablespoons (45 ml)canola oil
3 tablespoons (38 g)sugar
3 Tbsp (60 g) + 1/4 cup (85 g)honey, divided (3 Tbsp for dough + 1/4 cup for boiling)
1 teaspoonbrown sugar
1-1/2 teaspoonssalt
1large egg, room temperature
4 to 5 cups (500-625 g)bread flour
1 tablespoondried minced onion
1 tablespoonsesame seeds
1 tablespoonpoppy seeds

Instructions

  1. In a large bowl, dissolve the yeast in the warm water. Add the oil, sugar, 3 tablespoons honey, brown sugar, salt and egg; mix well. Stir in enough flour to form a soft dough.
  2. Turn onto a floured surface and knead until a smooth, firm dough forms, 8-10 minutes. Cover and let rest 10 minutes.
  3. Punch the dough down and shape into 12 balls. Push your thumb through the centers to form a 4 cm (1-1/2 inch) hole, then stretch and shape into an even ring. Place on a floured surface, cover and let rest 10 minutes; flatten the bagels slightly.
  4. In a large saucepan or Dutch oven, bring 8 cups (about 2 L) water and the remaining 1/4 cup honey to a boil. Drop in the bagels one at a time. Cook 45 seconds, turn and cook 45 seconds longer. Remove with a slotted spoon, drain, and sprinkle with minced onion, sesame seeds and poppy seeds.
  5. Place the bagels 5 cm (2 inches) apart on parchment-lined baking sheets. Bake at 220°C (425°F) for 12 minutes. Turn and bake until golden brown, about 5 minutes longer.
