
Starbucks Petite Vanilla Bean Scones (Copycat)
A copycat of Starbucks' petite vanilla bean scones: little vanilla-flecked scones topped with a vanilla bean glaze. Recipe by Sandra. Makes 8 small scones.

Ingredients
| 1 cup (125 g) | all-purpose flour |
| 1-1/2 tablespoons (19 g) | white granulated sugar |
| 1/2 tablespoon | baking powder |
| dash | salt |
| 3 tablespoons (43 g) | cold butter |
| 1/4 cup (60 ml) | heavy cream |
| 1/2 | vanilla bean, split and seeds scraped |
| 1/2 tablespoon | vanilla extract |
| 1 | egg white |
| 1-1/2 tablespoons (22 ml) | heavy cream (glaze) |
| 1/2 cup (60 g) | powdered sugar (glaze) |
| 1 teaspoon | vanilla extract (glaze) |
| 1/2 | vanilla bean, split and seeds scraped (glaze) |
Instructions
- Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the sugar, flour, vanilla bean seeds, baking powder and salt. Using a pastry blender or a knife and fork, cut in the cold butter until the mixture resembles coarse crumbs.
- Add the heavy cream, vanilla extract and egg white. Stir with a spoon to combine.
- Using your hands, knead into a soft dough - this only takes 1-2 minutes.
- Roll the dough into a rectangle about 2 cm (3/4 inch) thick. With a sharp knife, cut it into 8 small triangles.
- Place the triangles on the parchment and bake about 10 minutes, or until lightly golden.
- Make the glaze by whisking the heavy cream, powdered sugar, vanilla bean seeds and vanilla extract together. Once the scones have cooled, spread the glaze over the top.
