Starbucks Pink Drink

A copycat of Starbucks' Pink Drink, a refreshing iced blend of passion (or acai) herbal tea, white grape juice, coconut milk and fresh strawberries. Two versions from the sources are given: the first uses Tazo Passion tea with homemade simple syrup; the second uses acai berry tea sweetened to taste with optional agave nectar (note: it takes a lot of agave to match the store's sweetness).

Ingredients

1 cup (240 ml)water (for simple syrup)
2 cups (400 g)sugar (for simple syrup)
1 tea bagTazo Passion herbal tea
2 tablespoonssimple syrup
1/2 cup (120 ml)white grape juice
3 tablespoonscoconut milk
2 tablespoonsfresh strawberries, chopped
4 packsacai berry tea (Version 2)
1 cup (240 ml)hot boiling water (Version 2)
1-2 cups (240-480 ml)unsweetened coconut milk (Version 2)
to tasteagave nectar, optional (Version 2)

Instructions

Version 1 (with simple syrup):

  1. Make the simple syrup: place 1 cup (240 ml) water and 2 cups (400 g) sugar in a saucepan. Heat over medium-high just until it begins to boil, stirring occasionally until the sugar dissolves. Let the syrup cool before making the drink.
  2. Prepare the tea: add 8 ounces (240 ml) boiling water to 1 tea bag and steep for 5 minutes. Let the tea cool.
  3. Build the drink: add 2 tablespoons simple syrup to a glass, then 1/2 cup (120 ml) tea and 1/2 cup (120 ml) white grape juice. Stir well.
  4. Add ice, then stir in 3 tablespoons coconut milk gently. Add the chopped strawberries and serve immediately.

Version 2 (acai tea, sweeten to taste):

  1. In a 2-cup (480 ml) glass measuring cup, add 4 unwrapped acai berry tea packets. Pour 1 cup (240 ml) hot boiling water over them and let sit until cool. Squeeze out and discard the tea packets.
  2. Pour 1/2 cup (120 ml) white grape juice into the measuring cup with the tea.
  3. Fill a glass with ice and add about 1 cup of the tea/grape juice mixture. Top off with the desired amount (1-2 cups / 240-480 ml) unsweetened coconut milk.
  4. Add sliced strawberries and sweetener (agave nectar) if desired. Many ingredients can be adjusted to taste.
