Subway Bread

A copycat of Subway's soft sub buns — a simple yeast dough shaped into long skinny loaves, baked and brushed with butter. Makes four 9-inch (23 cm) sub buns.

Ingredients

1 tbspyeast
1 cup (240 ml)warm water at 110°F (43°C)
1.5 tspsalt
1 tbspsugar
2.5-2.75 cups (315-345 g)all-purpose flour
4 tbsp (60 ml)olive oil
as neededbutter, for brushing

Instructions

  1. When ready, warm the oven to 350°F (175°C). Line a cookie sheet with parchment paper and set aside.
  2. In the bowl of a stand mixer combine the oil, water, yeast, sugar and salt. Wait about five minutes for the yeast to activate.
  3. Sift in one cup of flour and combine with the dough hook for three to five minutes. Sift and work in another cup of flour.
  4. Continue adding the flour in 1/4-cup increments until a soft dough forms. Work the dough for eight minutes total.
  5. Turn the dough onto a lightly floured surface and knead until smooth. Shape into a ball, return to the bowl, cover with plastic wrap and let rise for half an hour.
  6. Turn the dough out onto a floured surface and divide into four portions. Roll each piece into a long skinny loaf nine to ten inches (23-25 cm) long. Arrange on the baking tray, leaving at least two inches (5 cm) between loaves.
  7. Cover the loaves with greased plastic and let rise in a warm place until doubled, about one hour.
  8. Bake for 25 minutes. When out of the oven, generously brush the tops with butter, cover with a dish towel and cool at least an hour before serving.
