Subway Meatball Sub

A copycat of the Subway meatball sub — tender veal-beef-pork meatballs simmered in marinara, tucked into Italian sub rolls and topped with melted mozzarella and parmesan.

Ingredients

1 sliceplain bread
1/4 cup (60 ml)milk
1.25 lb (565 g)ground beef combo (veal, beef & pork)
1 largeegg, lightly whisked
1/2 cup (50 g), dividedfinely grated parmesan cheese
2 tbspfreshly minced parsley
1/2 tspfinely minced garlic
1/2 tsp / as neededkosher salt
as desiredfreshly cracked pepper
2 tbsp (30 ml), for sautéingolive oil
4 cups (960 ml)marinara sauce
4 slices sliced lengthwise (1 loaf)Italian bread / sub rolls
1 cup (110 g)shredded mozzarella cheese

Instructions

  1. Warm the oven to 350°F (175°C).
  2. Place the sliced plain bread in a bowl with the milk. Stir and wait about five minutes until most of the liquid is absorbed. Remove excess milk and shred the bread to bits.
  3. In a mixing bowl, combine the meat with 1/4 cup parmesan, the soaked bread, garlic, parsley, 1/2 teaspoon salt and pepper. Mix and shape into two-inch (5 cm) meatballs.
  4. Bake the meatballs on a lightly greased baking tray for about 15 minutes.
  5. Pour the marinara sauce into a medium pot and warm over medium-low heat. Add the meatballs and simmer about ten more minutes.
  6. Meanwhile prepare the rolls soft or toasted: open them, spritz lightly with oil and toast on a hot skillet as desired.
  7. Set the oven to broil. Place the meatballs with sauce in a single layer in a shallow baking dish. Sprinkle with mozzarella and the remaining parmesan. Broil one to two minutes until the cheese melts.
  8. Scoop the meatballs onto the rolls and serve steaming hot.
