Taco Bell Enchirito

A copycat of the classic Taco Bell Enchirito — a soft flour tortilla stuffed with seasoned ground beef and refried beans, rolled up, then smothered in red sauce, melted cheddar and diced onion. The original clipping was a link/photo page only, so the method below is a faithful reconstruction of the standard Enchirito assembly.

Ingredients

450 g (1 lb)ground beef
1onion, diced
2 tbsp (30 g)taco seasoning
1 can (about 450 g)refried beans
8flour tortillas
1 cup (240 ml)red enchilada sauce
1 cup (115 g)shredded cheddar cheese
1/4 cup (40 g)onion, diced (for topping)

Instructions

  1. In a skillet over medium heat, brown the ground beef with the diced onion, breaking it up, until fully cooked; drain excess fat.
  2. Stir in the taco seasoning and a splash of water and simmer 2-3 minutes until thickened.
  3. Warm the refried beans in a small saucepan (or microwave) until spreadable.
  4. Warm each flour tortilla briefly to make it pliable. Spread a line of beans down the center, top with the seasoned beef, and roll up. Place seam-side down in a baking dish.
  5. Pour the warm red sauce over the rolled tortillas and scatter the shredded cheddar on top.
  6. Bake at 180°C (350°F) for about 8-10 minutes, until the cheese is melted and bubbling.
  7. Sprinkle with the raw diced onion and serve hot.
