A copycat of Taco Bell's Mexican Pizza — this is not your regular pizza, it's a splurge: two crispy fried tortillas sandwiching a delicious mix of taco meat, refried beans, enchilada sauce, and Mexican cheese blend, finished with toppings like sour cream and guacamole. Prep time 20 minutes, cook time 14 minutes, serves 4.

Ingredients

1 cup (240 ml)vegetable oil (for frying)
8flour tortillas (taco size)
2 cups (480 ml)cooked taco meat (see Taco Bell Meat recipe)
1 can, 15 oz (425 g)canned refried beans
1 can, 10 oz (285 g)canned enchilada sauce
2 cups (225 g)shredded Mexican cheese blend
to tastediced tomatoes (topping)
to tastesliced green onion (topping)
to tastesliced olives (topping)
to tastesour cream (topping)
to tasteguacamole (topping)

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Working in single batches, fry each tortilla for 3 to 4 minutes, or until crisp. Transfer to a paper towel-lined plate to drain the grease.
  2. Spread a generous amount of refried beans on each tortilla and spread the taco meat on top. Place one tortilla on top of another, making 4 sets.
  3. Top each set with 2 tablespoons of enchilada sauce and divide the Mexican cheese blend over the top.
  4. Bake the assembled pizzas in the oven at 350°F (175°C) for 8 to 10 minutes, or until the cheese melts.
  5. Add your favorite toppings — diced tomatoes, sliced green onion, sliced olives, sour cream, and guacamole. Slice and serve.
